Wood Fired Oven Cooking: Intermediate Wood-Fired Oven (Suffolk or Edinburgh)

Woodfired ovens are amazingly versatile.  After this class you’ll appreciate why a woodfired oven is the only piece of outdoor cooking equipment you need – it’s an oven, a hob, a barbeque, a grill, a slow cooker – so if you can cook it, you can definitely cook it in the wood fired oven.

We’ll be having away weekends in 2023 and 2024 in two different venues – Suffolk on 10th September 23 and 9th June 24, just outside Ipswich. Edinburgh for those of you further north, on 19th May 24

What Does the Class Cover?

This class will showcase some advanced techniques for wood-fired cooking. We’ll use the rising temperatures to cook brunch and use the embers for smoking. We’ll take the fire out and stabilise the oven to bake bread and pastries in the retained heat and we’ll pop in a few slow-cooked dishes to make use of the falling heat of the oven.

The menu for today will include:

  • Leek, onion and pepper pissaladiere
  • Scrambed egg muffins
  • Wood roast tomatoes
  • Smoked Salmon Fillet
  • Overnight Pain de Campagne
  • Roast Pork with Crackling
  • Potatoes Dauphinoise
  • White beans with sage.
  • Lentil Empanadas
  • Sausage Rolls
  • Maple roast peaches with pecan crumb

We’ll make beautifully baked loaves of crusty bread, roast pork with crispy crackling, braised beans with sage, grilled fish, griddled aubergine, sausage rolls, Portuguese custard tarts and plenty more.  These are just some of the things we’ll be cooking and after this class you’ll want to use your oven from dawn ’til dusk to cook every meal in every month of the year.

This class is designed to help build your confidence to use your oven to its maximum capacity and we recommend coming on this course once you’ve been on our Mastering Your Wood-Fired Oven course or Intro to Wood-Fired Ovens.
