Using a heat deflector in your woodfired oven – what do they do?

Not only does a heat deflector create more space in the oven and clears the floor of ash and embers, it lifts the fire over the roof of the oven so the food you’re cooking doesn’t get side-scorch and will get a fabulous grilling over the top.

Make sure you leave a gap so the oxygen can still get to the fire – as David does in this week’s video.

Never put your heat deflector at the back of your oven as you’ll cut off the oxygen supply to the flames and the fire won’t burn.

Ours are made of 3mm thick steel so they will withstand a lot of heat. When David first designed them, he used an old baking sheet which was much thinner. It did the job for a while before it met its end and fell apart!
